Roasted Cod with Radish Salsa

Ingredients
4 cod fillets
2 Tbs low-sodium soy sauce
2 Tbs sesame oil
2 cloves garlic, minced
2 tsp fresh ginger, grated
5 radishes, diced
2 green onions, thinly sliced
1/2 English cucumber, diced
1/2 jalapeño, diced (seeds and ribs removed)
2 Tbs cilantro, finely chopped
1 small lime, juice and zest
1 tsp honey
1/4 tsp salt
1/4 tsp black pepper
Directions
- Preheat oven to 425° F.
- Line a baking sheet with parchment paper.
- Spray with nonstick cooking spray.
- Add cod fillets.
- Stir together the soy sauce, sesame oil, garlic and ginger.
- Pour over the fish.
- Bake for 10 to 12 minutes until flaky, depending on thickness of fish.
- Make the salsa by combining the radishes, onions, cucumbers, jalapeños and cilantro in a bowl.
- Stir in the lime juice, lime zest, honey, salt and pepper.
- Serve the salsa on top of the fish.
